It has been an apple-y time of year! Last week I was processing apples Monday through Friday. I froze 19 bags of applesauce. There is about 2 quarts in each freezer bag.
We like applesauce plain but also in treats like Applesauce Cake and Applesauce Pancakes.

Applesauce Pancakes
3 cups flour
1 Tbsp.+1 tsp. baking powder
1 tsp. salt
2 Tbsp. sugar
1/2 tsp. cinnamon
1 cup milk
2 eggs
1/4 oil
2 cups applesauce
2 eggs
1/4 oil
2 cups applesauce
Combine dry ingredients in a mixing bowl.
Combine milk, eggs, and oil in a 2 cup liquid measurer.
Add wet ingredients to dry ingredients along with the applesauce.
Mix until nearly smooth.
Cook on a hot skillet or griddle as normal pancakes.
Enjoy!

THANK YOU!! I copied both recipes, and will be eager to try them this upcoming week. They both sound delicious. Have been disappointed with the quality and flavor of apples found in several grocery chains, so opted lately to purchase unsweeted applesause. Will work wonderfully in these recipes you shared. Am hoping to find some farmer's stands and local outlets for apples this fall. New to the southern area, so it's a learning curve from the midwest. Thank you again for a wonderful post! Thank you for commenting, Karla! You are smart to think of buying applesauce instead of apples when the apples aren't so good. You can still have fruit in your diet. I hope you find a good source of apples near by. I don't know if apples grow well in Arkansas. My great grandma lived in Arkansas and had a lovely fig tree. She'd put up fig preserves every year and send up home with a few jars when we'd visit. Maybe you can have a fig tree. They're not apples but they maybe something that you can have in Arkansas that you couldn't have in the midwest.
Thank you for the apple recipes! They both look so good! I am going to try making these once fall rolls around. I haven't been finding very good apples at our grocery stores either, the flavor is so lacking. But I will look to purchase them from a local orchard or farmer's market this fall.
Re: your recent sewing post....I watched a video about Booker T. Washington's Atlanta Exposition Speech, and learned so much. Casting our buckets down where we are is so true...in all aspects of life! Have a great week.
