Lasagna Roll-Ups

Here are some pictures of a project I did over the weekend. Mr. In The Mid-west's Grandpa needed someone to do some cooking for him. This is what I did.

I cut strips of wax paper just wide enough to go around each lasagna noodle. Then I wrapped them individually.


Packaged and clearly labeled. Ready to be frozen.

This is pretty much the recipe I used. Some of the spices and seasoning I didn't measure.

I copied the microwave instructions from the Swan's website. I have not tested the microwave instructions to see if they work for these roll-ups, (and I will not be able to because I don't have a microwave in my kitchen) but I hope they work. It took a lot of internet searching just come up with those microwave cooking suggestions for frozen lasagna roll-ups.

13-14 Lasagna Roll-Ups

MEAT SAUCE:
1 finely chopped onion
1 pound ground meat
2 TBS. oil
1 TBS. Italian seasoning
1 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. pepper
1, 6 oz. can of tomato paste
1 can full of water

Heat oil in skillet. Add onion, meat and seasonings. When meat is cooked, add tomato paste. Fill the tomato paste can with water and stir it into the sauce. Simmer 5 minutes.

CHEESE FILLING:
2 cups cottage cheese
1 1/2 cups shredded mozzarella
1/2 cup Parmesan cheese
2 eggs
1 TBS. dried parsley flakes
1/2 tsp. salt

Mix together until incorporated.

ASSEMBLY:
Boil 13-14 lasagna noodles.
Drain noodles and spread out on a clean towel.

Spread about a 1/4" layer of cheese mixture into each noodle, leaving 1" of space at one end of the noodle.

Cover with meat sauce.

Roll up the filled noodles towards the 1" of empty space.

Place seam side down onto tray.

Refrigerate a couple hours.

Cut wax paper into strips, about 2" wide. Wraps each roll-ups in wax paper and secure with tape.

Place into freezer bag.

Label, and freeze.

Microwave Instructions:
Dip in water to lightly coat. Place into microwave safe dish. Cover with plastic wrap. Microwave on high for 2 minutes. Add 3/4 cup of pasta sauce. Recover, and microwave 1 1/2 minutes longer. Let stand 5 minutes before serving.

Oven Instructions:
Preheat oven to 400°F. Cover bottom of 8"×8" baking dish with 1/2 cup of pasta sauce. Place 4 roll-ups in single layer. Cover with an additional 1 1/2 cups of sauce. Cover loosely with foil. Bake in center of oven for 45 minutes. Remove foil. Optional: add mozzarella cheese on top. Bake for an additional 15 minutes. Let stand 5 minutes before serving.
