I like to use this batter to make bread or muffins. More often than not I make muffins. My children seem make less messes while eating muffins verses eating a slice of banana bread.
Banana Batter For Bread Or Muffins
1/2 cup Oil
1 cup Sugar
2 Eggs
1 tsp. Vanilla Flavoring
2 cups Flour
1/2 tsp. Baking Soda
1/2 tsp. Salt
1 tsp. Baking Powder
1 1/2 cups Mashed Ripe Banana
Stir the oil and sugar together. Add the eggs and vanilla. Whisk vigorously until the mixture is a pale lemon color.
Dump the dry ingredients on top. Incorporate the baking soda, salt, and baking powder into the flour only, before incorporating it with the rest of the wet ingredients.
Add the mashed bananas and mix well.
Pour into greased muffin tins or greased loaf pan.
Bake at 350°F.
Bake muffins 25-30 minutes.
Bake bread 60-70 minutes.

This sounds like a good recipe! We have our favorite family recipe we've used for years that I still make every time we end up with too many bananas that we can't eat fast enough. It seems like there has been a time or two that I've added extra bananas when there were more than the recipe called for. I think it makes it so much more moist and tastes better that way!

This is interesting. I use the “B is for Banana Bread” recipe, it’s slightly different ratios of oil, sugar, and rising agents but I’ve definitely never measured the banana’s. 2 going brown? throw them in. 4? Cool, extra banana-y. 5? Lets double the whole thing.

Haha! Yeah, I've been there, done that. But, sometimes the family wants Banana bread to tastes the same every batch. :)
